Each ticket counts up and turns amber at 8 minutes and red at 15, so you see at a glance which order has waited longest.
Extras, removals and swaps sit on their own lines in colour under the dish, with the guest's note on the ticket.
Tap a dish when it's done, then Ready. The guest's phone shows it at once. Tapped too soon? Undo steps it back for two minutes.
